This is the easiest recipe I’ve ever posted. A departure from the typical spaghetti marinara, but just as quick. The pumpkin seeds add a welcome crunch and along with healthy vitamins and minerals such as phosphorus, magnesium, vitamin K, vitamin E and zinc.

All the ingredients you need to make a quick and healthy meal for the whole family.

Two Step Pesto Pasta with Pumpkin Seeds

(Serves 4)

1/4 cup pesto sauce*
8 oz whole wheat spaghetti
1/4 cup roasted shelled pumpkin seeds
Shredded Romano or Parmesan cheese

1. Cook spaghetti according to package directions. Drain and return to pot.
2. Stir in pesto and pumpkin seeds. Top with cheese as desired.

*Don’t over-do the pesto sauce. It contains healthy oils, but those healthy oils can also have lots of calories that add up fast if you are drenching the pasta! You can also make your own pesto sauce if you have a food processor with lime juice, cilantro, garlic, parmesan or romano cheese, olive oil and pepper.
