I had some whole wheat sandwich pockets leftover yesterday and needed to find a way to use them up, but I was too hungry to take the time to run to the grocery store. I ended up whipping up this simple recipe with common ingredients I already had on hand, and you probably do too.

Albacore Tuna Patties with Roasted Red Pepper Hummus

Serves 4

Three 5oz cans of white albacore tuna packed in water, drained
1/2 cup breadcrumbs
1 egg
1/4 cup chopped green onion
1 tablespoon mustard
1 teaspoon sriracha (optional, I just wanted to add a little spice)
Hummus (any variety, for topping. Also optional)
Lettuce, tomato, cucumber for topping

1. Preheat oven to 450 degrees. Combine all above ingredients in a medium bowl and form into 4 patties.

2. Mist baking sheet with cooking spray before placing patties. Bake for 15- 20 minutes.

3. Warm sandwich pockets for 15 seconds in the oven. Insert patty, top with hummus and your choice of veggies.

My boyfriend had his with chipotle mayo and cucumber (pictured). I also think they would be good with homemade tzatziki or the other yogurt-based dip (step 4) I made for the skinny burgers.

Nutrition Info per serving (1 patty with sandwich pocket): 255 calories, 4.1g of fat, 0.8g saturated fat.
