I’ve been on a smoothie bowl kick this summer. Actually, I love smoothie bowls year-round. When I lived up north, it wasn’t uncommon for me to whip up a pumpkin smoothie bowl during the winter. I’d then proceed to eat it while huddled under a blanket and receiving strange looks from my husband. His loss, because these bowls are fantastic!

My absolute favorite part of eating a smoothie bowl is the toppings. Eating my smoothie with a spoon and having something crunchy on top makes it much more satisfying to me than a smoothie in a cup. I can also slurp down a smoothie in record time, so I appreciate the fact that smoothie bowls slow me down a little.

I’ve learned that the key to a good smoothie bowl is frozen fruit, especially frozen banana. That’s what makes this smoothie bowl thick enough to hold up all the toppings I like to pile on. The addition of cottage cheese gives it an extra creamy consistency and makes it taste *a little* like cheesecake.

This smoothie bowl keeps me full thanks to the protein from the cottage cheese and the Silk Vanilla Protein Nutmilk I used. I enjoy the taste of almond and cashew milks, but I don’t love the minimal amounts of protein they provide. I decided to try out the new Silk Vanilla Protein Nutmilk, and was pleasantly surprised.  It has pea protein added, which provides 10 grams of protein per cup. Fortunately, I didn’t notice any funky after-taste from the pea protein. You could also add a vanilla or unflavored protein powder for an additional boost.

Have fun creating your smoothie bowl! You can swap out the cottage cheese for yogurt or use any type of milk you have on hand. The blueberries can also be traded for any other frozen fruit. I love smoothie bowls morning, noon, or night!

Whatever you do, don’t forget the toppings!

Blueberry Cheesecake Smoothie Bowl
Makes 1 smoothie bowl

¼ cup cottage cheese
*¾ cup milk of choice
½ teaspoon vanilla extract
½ banana, sliced and then frozen
½ cup frozen blueberries

Combine all ingredients in a blender. Blend until smooth. Pour smoothie into a bowl and add toppings.

Toppings:
I used fresh banana slices, fresh blueberries, and Purely Elizabeth granola. I think this bowl would also be delicious topped with some chopped almonds or walnuts.

*You might need a bit more or less liquid depending on your blender. Mine is showing its age, so I added an extra tablespoon of milk to get everything moving.
