I got the idea for this recipe from Pinterest and tweaked it a bit to make a healthier version. It combines three of my favorite things that I eat almost daily: oats, berries, and dark chocolate. I ended up eating most of the bars as dessert, but they would work great for breakfast as well. Bake on a Sunday and have breakfast ready for the week or take to a family dinner for a healthy alternative to cakes or pies.
Ingredients
- 2 cups old fashioned oatmeal
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/3 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup walnuts
- 1/2 cup sliced strawberries
- 1/2 cup raspberries
- 1/3 cup dark chocolate chips
- 2 cups low fat milk
- 1 egg
- 3 tablespoons Brummel and Brown yogurt spread (melted)*
- 1 tablespoon vanilla extract
- 1 sliced banana
1. Preheat oven to 375 degrees. Spray an 8×8 baking dish with nonstick cooking spray.
2. Combine oats, baking powder, cinnamon, brown sugar, salt, half the walnuts, half of the chocolate, and half of the berries in a large bowl. Pour into the baking dish. Sprinkle on the remaining walnuts, berries and chocolate. Arrange the banana slices overtop.
3. In another bowl, whisk together the milk, egg, yogurt spread and vanilla extract. Pour the liquid mixture over the oats and berries into the baking dish. Gently shake the dish to help the mix throughout the oats.
4. Bake for 35 to 40 minutes or until the liquid has set and top becomes golden brown. Enjoy!
