Sounds a little weird right? But it works! I was craving something sweet on Sunday night and I knew I had some cocoa powder, chocolate chips and an entire bag of corn meal that I don’t know how to use other than to make a million types of cornbread, so I decided to give some chocolate cornbread a try. After I was done I figured out they were kind of just whole-grain brownies, so nothing too ground-breaking, but hey– anything thats chocolate AND healthy is pretty awesome.
Chocolate Cornbread
- 2/3 cup whole grain flour
- 2/3 cup stone ground cornmeal
- 2/3 cup of cocoa powder
- 2/3 cup sugar
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1 large egg
- 1/3 cup applesauce
- 1/3 cup plain Greek yogurt
- 1 cup of skim milk
- 1/3 cup mini chocolate chips
1. Preheat oven to 400 degrees. Spray an 8×8 inch pan with nonstick cooking spray. In a medium bowl, mix together dry ingredients (except chocolate chips). In a separate larger bowl, whisk together wet ingredients.
2. Mix dry ingredients into wet ingredients until mixed well. Fold in chocolate chips. Pour into pan and bake for 25 minutes.
