One of my New Years resolutions is to not bore you guys with random stories that have nothing to do with the recipe you just googled. My gift to you is to not have to scroll for four minutes to find what you’re actually looking for!
We’re doing a Vegan January challenge at Nutrition Awareness so here’s an easy recipe to keep your lucky streak going in to 2020: vegan black-eyed peas. Trust us, you won’t miss the bacon.
Vegan Black-Eyed Peas Recipe (Instant Pot)
You will need:
- 1 tablespoon avocado oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 celery sticks, chopped
- 4 cups vegetable stock
- 1 lb bag dried black-eyed peas
- 1 tablespoon thyme
- Salt and pepper to taste
- Turn instant pot to “sauté.” Add the avocado oil, let it heat up, then add the celery and onion. Sauté and stir for 2 minutes then add minced garlic and sauté an additional minute or 2, until soft and fragrant.
- Turn off the instant pot. Use a plastic or wooden utensil to scrape all the bits off the bottom of the pot then pour in the vegetable stock. Add the beans, thyme, salt and pepper. Press the “bean” button on the instant pot (or manually pressure cook for 50 minutes).
Done! These beans go great with collard greens (I replaced the butter with more olive oil) or in this Balsamic Black-Eyed Pea Power Bowl.
I’ve used them in power bowls and even made a great black-eyed pea burger with mushrooms and chopped broccoli. This recipe makes a ton, so make sure to freeze what you don’t plan on using for later.
