Mini Crustless Quiches
Makes 12 Mini Quiches in 25 minutes
- 6 eggs
- 4 oz goat cheese, crumbled
- 1 medium tomato, diced
- 3/4 cup spinach
- 2 teaspoons dried thyme
- 1/2 teaspoon paprika
1. Preheat oven to 350 degrees. Whisk eggs together and stir in all above ingredients in a medium bowl.
2. Spray muffin tin with nonstick cooking spray and divide the mixture between the cups. Bake for 15-20 minutes until muffins are firm. Let cool for 10 minutes before removing from pan.
